1 1# package fresh sauerkraut, rinsed, drained and squeezed dry as possible
2 large eggs, lightly beaten
1/3 cup flour
1/2 cup chopped green onions
3/4 tsp. Salt
1/2 tsp. Ground pepper
1/2 to 3/4 cup vegetable oil for frying
Preheat oven to 250 for warming. Place sauerkraut in bowl and stir in remaining ingredients. Heat oil over medium heat until hot but not smoking. Fill ¼ cup measure with kraut mixture and drop into hot oil; flatten into pancake shape with fork. Fry, turning once, until golden. Drain on paper towels and keep warm in oven while cooking rest.
Brown Kielbasa slices until golden. Serve with pancakes and warm applesauce sprinkled with cinnamon.
This is a super quick and simple recipe but the flavor is unusual enough to give it a try!.

Sauerkraut soup, sauerkraut stew, sauerkraut bakes - all those I've tried often and liked a lot. But sauerkraut cakes is new to me. Will attempt them soon and report back! Thanks for the recipe!
