Remember that old recipe for Magic Bars? Well I didn't. I'd forgotten all about them until Susan of Food Blogga reminded me. And they've been stuck in my head ever since. So I bought the ingredients, thinking Sophie and I would make a batch last weekend while we were in our flurry of Christmas Cookie baking. Not surprisingly, we didn't get to it.
Yesterday, though, I decided to make them... with a twist. As mini pies. Because I believe in the The Mini Pie Revolution.
Instead of the usual graham cracker/butter crust I made a regular shortcrust. I mixed the condensed milk, chocolate chips, coconut and walnuts together in a bowl before spooning it carefully into each little mini pie shell. Then I baked them for about 25 minutes.
As Jack said, "yum."




Whoa, that's like a coconut macaroon with the munchies :) Excellent. I just ate a lot of these holiday bakes that were given to my mom in a flurry of office/ association Christmas parties. I need to exercise before trying these out :)

wow. wow. wow. they look delicious... as well as the bite sized apple pies, the snowflake cookies, etc. i should be your neighbor. ;)

The ingredients of magic bars sound a lot like the ones that went into what my college dining hall called "cowboy cookies." (I have no idea where the name came from.) It looks like they've adapted quite nicely to their identity as mini-pies. :)
